CSA: Week 8

This week I had to be quick about using our veggies (seeing as I still have garlic scapes from June...), anyway little man and I were taking a road trip and wouldn't be able to enjoy the yummy delights. I ended up making a tomato sauce, freezing some of the husky tomatoes, and making chocolate beet muffins. This time I cooking the beets before grinding them up, I used less beets, and more booze, all of this created quite a yummy muffin. Little man watched me eat one and declared that he wanted "birfday cake" too.

Here's what was in our share:3 Tomatoes
1 pint husky tomatoes (or ground cherries)
1 zucchini
2 pickling cucumbers
1 green pepper
1 poblano pepper
2 jalapeno peppers
1 head of red lettuce
1 bunch of garlic scallions
1 bunch of basil
1 Rosita eggplant
1 bunch of beets
1 onion

I had never heard of husky tomatoes, so I decided to try them out, they remind me of tomatillos, except much smaller and not sticky under the husk. These are the tastiest little things. They are very sweet and do not really taste tomato-y. I'm not sure how to describe them, but they freeze well and supposedly taste great in a muffin.
After my last tackling of chocolate beet muffins, I was determined not to make them again. However, when you receive beets in your CSA you say... OK! So I looked up a new recipe and went for it. These were so tasty and they came out in the perfect muffin shape.
