Our week 2 bunch:
1 zucchini (we could have chosen summer squash, but I was still in the mood for bread)
1 kousa squash
1 bunch of hakurei turnips (we could have chosen more radishes, but I like variety)
1 bunch of spinach (enough for a lot of people) (we could have chosen romaine lettuce)
1 bunch of arugula (I split this in half for a co-worker to share)
1 head of red lettuce (we could have chosen green lettuce)
1 bunch of basil (we could have chosen cilantro, but I already have that at home)
2 bags of peas
1 bunch of garlic scapes (they didn't make the picture this week... check out last week's picture, they're the long green things on the right side).
(the Kashi cereal is from the local grocery store...very yummy, but not locally grown)
So far I have made, a lot of salad and a stir fry. I need to get more creative with my cooking, however, it has been hot and humid here and I haven't really wanted to cook. I also made a lot of pesto with my leftover cilantro and basil. I can't wait to use it later... it smells so good. We ended up using some of it to make lettuce wraps (with turkey) and veggie omelettes. I also made a chicken fried rice with lots of vegetables. I am not concerned about our vitamin or iron intake this month!!
