CSA: Week 5

This week:

1 kousa squash
1 zucchini
1 summer squash
1 bag of green beans
1 bunch of radishes
1 bunch of swiss chard
1 bunch of garlic scallions
1 bunch of radishes (traded out my green onions)
2 pickling cucumbers
1 bunch of carrots

This week I had a difficult time determining what to make with all of the stuff. One night I made a saute of squash, radishes and green onions. I made a yummy salad to share with a good friend, that included only tomatoes and steak from the grocery store! It had lettuce, spinach, radishes, cucumbers, garlic scallions, and peas.

Finally, I made a dip. I couldn't figure out what to do with swiss chard. It's something I would steam down ...kind like spinach, but I really didn't want to cook. So I made a dip. It was a tasty dip, kind of like a spinach dip, minus the spinach, and only 40 calories per serving! I also received a recipe for Chard Chips...so we'll give those a whirl when the heat dies down and I feel like turning on the oven.

Oh and I used one zucchini to make 2 loaves of bread and 6 muffins. Yummy!!
