Pinterest Project: Banana Bread

I've been experimenting with different flour mixtures I've found that brown rice flour, tapioca flour and any other flour is a good combo. Unfortunately I ran out of brown rice flour and have plenty of white rice flour. {I had an epic fail with white rice flour. I didn't understand that you really shouldn't use just one type of flour in your baking. Several types give a more "typical" flour taste and texture. Just white leaves a very gritty texture....made pancakes before I knew about the multiple types....not good.} [and a further note...when baking with coconut flour...use WAY less than you think is necessary... it will thicken]

Back to my banana bread.  Thankfully the website did a gluten free/dairy free and I made it nut free.  We were going to visit friends who had a tree nut/dairy allergy....made for a very interesting meal.
To make the bread  I used a little brown rice, some white rice, garbanzo bean and sorghum flours (good mix). I doubled the recipe and made cute little loaves along with a big loaf. There was plenty of room for errror, yet, Little man tried the bread and stated "mommy this is really good bread!" Hooray!!
